Complex, excellent, complete. Located in the sub-GI of Okanagan Falls, Stag's Hollow celebrated 25 years in 2020. The fifth edition of their premium estate red called Cachet is a blend of 47% Syrah, 33% Merlot, 10% Cabernet Franc and 5% each Cabernet Sauvignon and Viognier grown on their estate Stag's Hollow Vineyard in Okanagan Falls and the Amalia Vineyard in Osoyoos. After a secondary fermentation the wine was matured in components in one large 500L French barrel and two French barriques for 18 months then bottled unfined and unfiltered.
It's a complete wine, plush and complex, that offers warm fruitcake and black raspberry jam aromas layered with vanilla, star anise, rose petals after the rain atop of carob and coffee bean. The palate is succulent, seamless and mouthfilling. Blackberry seeds, cocoa, baking spice and pipe tobacco are underscored by generous fruit.
Excellent.
I reviewed this wine after it had been open for 24 hours and feel that time allowed to it breathe nicely. Decant if drinking now.t.
